Abstract：The β-(1-3) glucan was isolated in ways of Sevage deproteinization,acid extraction and alkali extraction from beer yeast respectively.The biochemical properties of the polysaccharide products were analyzed.It was considered that the alkali extracting method was ideal for isolating superior β-(1-3) glucan from beer yeast.
