Abstract:The content of micro-components of Hangzhou Daqu is determined by the gas chromatography. The multivariate linear regression is employed to study the mathematical relation between micro-components and quality. After regressive calculation for 48 samples, the linear relation between the quality grade, fragrance grade, flavor grade and micro-components is deduced. The results show that the interrelation between fragrance grade and micro-components is superior to the interrelation between flavor grade and micro-components, and there is a linear relation between quality grade and micro-components on the whole. All these found the theoretical base of wine mixing.
