摘要: 本文采用气相色谱法测定杭州大曲的微量组分含量,并运用多元线性回归法研究其微量组分含量与酒质的数理关系.通过对48个酒样的回归计算得到杭州大曲质量评分、香评分和味评分与微量成分的线性关系式.研究结果表明,杭州大曲香评分与微量成分的相关情况优于味评分与微量成分的相关情况,质量评分与微量成分基本上呈线性关系,这为白酒的勾兑打下理论基础.

Abstract: The content of micro-components of Hangzhou Daqu is determined by the gas chromatography. The multivariate linear regression is employed to study the mathematical relation between micro-components and quality. After regressive calculation for 48 samples, the linear relation between the quality grade, fragrance grade, flavor grade and micro-components is deduced. The results show that the interrelation between fragrance grade and micro-components is superior to the interrelation between flavor grade and micro-components, and there is a linear relation between quality grade and micro-components on the whole. All these found the theoretical base of wine mixing.
